It takes timing, when your wheelie ends, flick the joystick up to wheelie again. You will get used to the sounds and duration of how long the wheelie is and be able to time it better with practice.

You barely lift up the Wheel/Wii Remote many times so it doesn't take you down from a wheelie, it just brings you up when your done; or, you could learn the perfect timing.
