I won't post mines as the ones that I've been doing weren't serious ones (but just plain crap times to unlock Birdo & Toadette). However, only one I did good in was Bowser's Castle (which was a 2:58.352). I dunno about the N64 version... I'll need to check that in a bit.

Edit: The time that I've done for N64 Bowser's Castle is 2:59.922

Yeah, it'll be more fair then. I'll post all my times one day. My Rainbow Road sucks, and my only good ones are DK Mountain, Mushroom Gorge and Desert Hills.
